It is necessary to blend both the pullulan and the gelatin into the soft candy; otherwise, we won’t get a desirable result. The candy won’t be as soft as we want it to be. If only the gelatin or pullulan were blended into the soft candy, it would start to stick to your teeth.

The final texture of candy also depends on the different levels of temperatures and sugar concentrations. Usually, a hot temperature is used to make hard candy, a medium heat makes soft candy, and a cool temperature makes chewy candy.
